NMRを用いた迅速な食肉スペシエーション
The rapid speciation of meat products can is critical to show their authenticity and provenance. A process for the rapid screening for authenticating beef has been developed using NMR. The screening protocol takes only 10 minutes and can be used at key points in the supply chain, such as meat processors or wholesales, where incoming raw materials are in the form of frozen blocks of trimmings. NMR analysis using the Pulsar benchtop NMR spectrometer based on the triglyceride composition has been shown to reliably distinguish beef, pork and horse meat.
